But the human skills recently faced a hi-tech challenge in the form of a new app called “Tuna Scope” that helps buyers instantly pick out choice cuts using a deep-learning algorithm that analyses grading data. Developers of the app using artificial intelligence (AI) hope it will give rise to a more “unified grading standard” for the industry
